Jaggery (often called Gur) is a traditional, unrefined non-centrifugal sugar made from concentrated sugarcane juice or palm sap. Unlike refined white sugar, it is produced without separating the nutritious molasses, which gives it a distinct golden-to-dark-brown colour and a rich, caramel-like flavour.
